I jumped at the chance to try making maesil-ju upon finding green plums (known as maesil, or ume) at the Flushing Hmart! This fruit is only in season for a short time, so get a head start at making this infused alcohol that’ll be ready by fall.
Makes 1.75L
Ingredients
3 pounds green plums (labeled as maesil or ume at Asian grocery stores)
1.7 liters soju (20% ABV)
1/2 cup vodka
Directions
Wash green plums thoroughly, and use a chopstick or toothpick to remove the stems. Dry in a sunny, airy place for one day.
To a clean, disinfected jar, with a lid add plums, soju, and vodka. Store for 100 days, then remove fruit. Enjoy immediately or ferment for up to another 3 months.
