The key to this refreshing cold noodle dish is the homemade dongchimi, but you can easily sub in the store bought kind!

Ingredients
2 servings somen noodles
2 cups dongchimi brine, cold
1/2 cup dongchimi radish
2 tbsp lemon lime soda
For garnish:
sliced Korean pear
sliced tomato
julienned cucumber
Directions
Boil somen noodles accordingly to package directions. Rinse in cold water and drain.
Divide noodles amongst two bowls, and top with brine, radish, and lemon-lime soda. Garnish with pear slices, tomato, and cucummber.
